Our 4th Texas Whiskey Festival blend is another all-bourbon mix. These differ from batch 3, which had two high rye bourbons. Dripping Springs Distilling (1876 Bourbon) is corn and rye. Yellow Rose's Outlaw Bourbon is 100% corn. The Shire Percheron is high rye and finished with French oak staves. Again, the different flavors were a lot of fun.

My favorite part of the blends is the process—the collaboration and sharing of knowledge. As a group, we create five to six blends, bottle them, and let them sit for a couple of weeks.

We let them sit so the whiskey has time to blend. It is incredible how the blends change.

We blind taste the blends, vote, and discuss which we prefer to release. The one we release isn't always mine or someone else's favorite. It is the blend we think the majority of whiskey drinkers will enjoy.
